Veggie Burgers with Pulp from the Juicer!

A reason to be happy about cleaning the juicer is using the pulp to make Veggie Burgers!

Ingredients

  • 1 cup cooked beans and rice (lentils and brown rice for burger in photo)
  • 1 cup pulp from juicer, ie carrot, cabbage, beet
  • 1/2 cup oats
  • 1 tsp sea salt
  • 1 tblsp coconut oil
  • Package of Daiya mozzarella vegan cheese

Preparation

  1. Once you’ve made the juice from enough veggies to make 1 cup of pulp,
  2. Combine with equal parts brown rice and lentils, throw in oats and sea salt, mix in a mixing bowl, form into patties
  3. Cook in a pan over medium heat about 6 min each side or until golden brown, top with Daiya vegan cheese.
  4. Deliciousness!
