Sweet Potato and Tofu Flavorgasm

Get ready for a vegan flavorgasm!

Ingredients

  • 1 tsp sea salt,
  • 1 tbsp thyme
  • 1/4 cup basil
  • 1 block Tofu,
  • 1 sweet potato
  • 1/2 yellow bell pepper
  • 1 cup spinach greens
  • 1/2 cucumber
  • 1/2 avocado

Preparation

  1. Cut sweet potato into cubes, saute in saucepan for 10 minutes with thyme, sea salt, basil
  2. Make sure to remove excess water from tofu, to ensure firmness when cooking, cut into 1/2 inch slices and saute in sauce pan on med-hi heat for 7 min each side in 1 tbsp olive oil with a dash of sea salt
  3. Combine tofu and sweet potato on  a plate, top with spinach, cucumber, avocado, and bell pepper
  4. Enjoy!
