Simple is Good!
Ingredients
- 1 tbsp basil
- 1 tsp rosemary
- 1 tsp thyme
- 1 tsp sea salt
- 1 cup dry brown rice
- 1 cup dry black beans
Preparation
- Prepare black beans for cooking by rinsing, then soaking overnight or for 8 hours.
- Drain beans, place in 3 cups water in pot, bring to a boil, then lower heat to simmer, cover, for 35-40 min
- Place rice in 1 1/2 cups water, bring to a boil, then lower heat to simmer for 45 minutes
- 3/4 way through cooking, add half sea salt, rosemary, basil, and thyme to rice pot, the other half to bean pot
- After cooking time, remove rice and bean pots from heat, leave covered 5 minutes, then fluff rice with fork
- If desired, combine rice and beans in serving dish
- Top with fresh cut bell peppers, spinach, carrots, and any other vegetables for a fresh and healthy raw element.
