Simple Black Beans and Brown Rice

Simple is Good!

Ingredients

  • 1 tbsp basil
  • 1 tsp rosemary
  • 1 tsp thyme
  • 1 tsp sea salt
  • 1 cup dry brown rice
  • 1 cup dry black beans

Preparation

  1. Prepare black beans for cooking by rinsing, then soaking overnight or for 8 hours.
  2. Drain beans, place in 3 cups water in pot, bring to a boil, then lower heat to simmer, cover, for 35-40 min
  3. Place rice in 1 1/2 cups water, bring to a boil, then lower heat to simmer for 45 minutes
  4. 3/4 way through cooking, add half sea salt, rosemary, basil, and thyme to rice pot, the other half to bean pot
  5. After cooking time, remove rice and bean pots from heat, leave covered 5 minutes, then fluff rice with fork
  6. If desired, combine rice and beans in serving dish
  7. Top with fresh cut bell peppers, spinach, carrots, and any other vegetables for a fresh and healthy raw element.
  8. Enjoy!!
